Tim and Jake usually watch the super bowl and i usually have snacks
for them. Any good recipes that are quick and easy???

A twist on an old favorite; I found some of those little hot dogs in our
grocery store just after Christmas that were really different- they were
made from chicken, and there was a teriyaki flavor and a buffalo wing
flavor.. I did them up in the crescent roll pastry with some dips- blue
cheese dressing would have been great with the buffalo style, but I
didn't have any. I made a dill dip with sour cream which worked fine
with both of flavors.

We're doing chili this Sunday. Our neighbor gave us some ground venison
which we thought might be good in it. I'm not usually a game eater, but
I did try the steaks (which my husband and son ate) and it was really good.

I don't really care much about football, but I love the Superbowl- it's
all about the snacks for me Smile And we live in NY, so GO GIANTS!!

I don't care about the Superbowl at all, it's all about the commercials for
me! If we go to a friend's house, we Tivo it at home, so we can watch the
commercials again without distraction (if there were any good ones).

It's a recipe for a wonderful goat cheese torta appetizer (authored by a
former member of rec.food.cooking who passed away in '96) that I've been
making and bringing to parties for years. It's always a hit.

This past New Year's Eve I was perusing http://www.allrecipes.com for a
unique appetizer that I could make for a party at my brother's house. I
ended up making these:

like a strange combination of ingredients for the sauce, but they were
really yummy! I couldn't believe how quickly they were scarfed up. Everyone
wanted the recipe. (Note: I used a full pound of bacon and two cans of whole
water chestnuts and doubled the sauce recipe. I also precooked the bacon
until it was about halfway done before wrapping it around the water
chestnuts. After cooking, I stuck a toothpick into each roll before placing
on a serving platter.)

We're planning on smoking some baby back ribs on Sunday and making a bunch
of Buffalo wings. Not sure what else I'm going to make yet, but you can bet
it'll be good and "junky"--perfect food for watching the big game! Wink

I love the commercials too Jamie!!! Smile I am not a big football fan
but we are Titans fans here!! Too bad they didn't make it to the
super bowl! Sad

Oh chili does sound good!

We're going to a friend's house, and she is making a big pot of chili.
We're going to bring some white chili (chicken and white beans, etc.) and
some corn bread. White chili is a nice alternative, and can be a bit
healthier. Look it up on www.epicurious.com and you'll find tons of
recipes.

Some of my favorite easy snacks that look and taste really yummy:
Ham pinwheels:

*Take a can of crescent roll dough and roll it out flat. (Do not separate
the triangles...just make one big rectangle)
*Pinch together all the seams and roll out to about 8" by 12" rectangle.
*Spread with cream cheese... I use about half of an 8 oz block. It's equally
good with the fat-free cream cheese if you want to feel virtuous.
*Lay out 6 slices of thin-sliced ham over the cream cheese... keeping about
1/2" of dough at the bottom and top edges
*roll up. starting with the bottom edge.. seal the seam.
*Slice into 3/4" thicknesses.. lay out on lightly greased cookie sheet.
*Bake at 375 until golden brown

One can should make 16 pinwheels. They are awesome


Another crescent roll/cream cheese recipe:
Starts out the same as above... roll out dough, spread with cream cheese
Drop dollops of strawberry preserves and spread over cream cheese
Roll up, slice and bake at 375.
Messy, but very sweet. MMMMMmmm


Finally, the standard pigs-in-blankets
Start with crescent roll dough.. cut each triangle into 3 smaller triangles.
Lay a cocktail sausage (lil smokies or whatever you call them) on the wide
end, roll up and bake at 375 until golden brown.
Serve with mustard or ketchup.


I can't make enough of the ham ones or the pigs in blankets. We are simple
folks with simple tastes. Wink

I think goat cheese is one of those foods that you either love or you hate.
I absolutely love it (I make a killer manicotti stuffed with goat cheese,
spinach, and roasted chicken). DH HATES it. There's a Hidden Valley Torte
that you can make (http://www.fooddownunder.com/cgi-bin/recipe.cgi?r=129417)
that uses only cream cheese and no goat cheese. (When I make it I layer the
artichoke hearts and roasted red peppers separately, rather than mix them
together--makes for a very pretty presentation. I also omit the parsley.)
That's also been a big hit when I've brought it to parties.

If you like the simple tastes, and clearly you like cream cheese, you'll
love this yummy/easy recipe...take your favorite sliced salami, put a little
cut of cream cheese on it, and fold it in half like a taco. The cream
cheese holds it together, but if you're feeling fancy, you can stick a
toothpick in each one. Eat. Very easy, and very yummy! We used Genoa hot
salami, which wasn't hot at all (I have a very tender mouth), and it was
sooooo goood!

I used to do that with Lebanon bologna (it's a PA Dutch/Amish sweet
sausage--not at all like regular bologna). Spread cream cheese on a slice,
roll it up, then stick a toothpick in it. (Not sure if Lebanon bologna is
available outside of the mid-Atlantic area.)

Buffalo Wing Dip

(2) 8-oz. pkg. cream cheese
1c. ranch dressing
1c. shredded cheddar cheese
1 jar (I think it's 13 oz.) wing sauce (Hooters medium is my favorite)
1.5 lbs. boneless chicken breasts, cooked and shredded

Melt first four ingredients together in a pot and add chicken. Serve
in a crock pot with Fritos Scoops.

Always a hit at parties!!

I love Lebanon bologna! I used to live in Lebanon County, PA. We have one
store here in Columbus, OH that sells it in their deli. I like to eat it on
wheat toast with mustard. I might have to pick some up this week...
